Research subjects

Genetic profiling of strains of probiotic interest. Study of the antimicrobial effects of different milk fractions belonging to several species of mammals. Profiling of the effect of probiotics on food pathogens and intestinal flora through the use of a dynamic gastrointestinal model. Interactions between probiotic bacteria and pathogens (E. coli O157:H7, Salmonella enterica, Campylobacter jejuni, Cronobacter sakazakii). Measuring the effect of molecules produced by probiotics on the virulence of these bacteria.
